Fork or Fingers Kid Casserole

I made my sweet potato pie last night. I don’t remember where I got the recipe. I’ve heard that the sweet potato is one of the healthiest foods you can find in a grocery store. I’m glad that both my kids like it. Even my super picky eater likes it. Of course she only likes sweet potatoes made like this:

Sweet Potato Casserole

  • 2 sweet potatoes
  • 2 eggs
  • 1 banana
  • 1 teaspoon ground cinnamon

Preheat the oven to 400 degrees F.
Put the sweet potatoes on a sheet tray and roast for 40 minutes.

When the potatoes are cool enough to handle and not cook the eggs, peel them and mash all ingredients together with a potato masher until well combined.

Transfer the mixture to a 2-quart casserole dish. Bake until the mixture hot all the way through, about 40 minutes at 350 degrees.

We went out for dinner tonight so we brought some of the casserole with us for Lukas. Kurt cut it up in small chunks for him, but Lukas wanted the fork. He insisted that he eat his sweet potato with it. We watched and waited. Finally Kurt gave in and helped Lukas get a bite onto the fork. Lukas smiled and giggled, then with his other hand picked the food off the fork and put the food in his mouth with his fingers. Hilarious. He still tried to use the fork to eat through his entire meal.
